This week at the block

The board changes. The rule doesn’t.

Six cuts go up at a time, each one off an animal we bought entire. When a ticket comes down, that cut is gone until the next beast.

One per pan, cut to the width of a thumb, never the width of a coin. Salt it when you leave the shop and it will be ready when you are.

We buy the whole animal, or we don’t buy at all

Every beast arrives entire, never boxed, never in plastic. That is a rule you can check, not a mood board. It is why the board runs out, why the sausages change weekly, and why the marrow bones sit next to the rib with the same pride.

Named farms, or nothing

Three farms carry the counter. We visit them, we name them on every ticket, and when a farm has nothing ready, the board goes short rather than anonymous.

Behind the counter there is a colder, quieter room where ribs and sirloins sit on the bone and lose everything they don’t need. We count the days on every rack and we will tell you the number before you ask.
