Everything here was made, matured and bottled on this site — no bought-in spirit, no mystery casks. Each label below is the full record: what it is, how it reads, and exactly what it slept in.

LABEL I

$68 · 700ML

Millrace

Single malt whisky · 46% ABV

NOSE
Orchard fruit under wet stone; malt biscuit; a cold-room mineral edge.
PALATE
Barley sugar first, then pear skin and toasted oak, tightening mid-palate.
FINISH
Long and dry-stone cool, with the bourbon cask arriving late and staying.
SERVE
Serve with one thumb of water at room temperature. It was cut at 46% so you wouldn't have to guess.

LABEL II

Stone Bond

Cask-strength single malt · 57.1% ABV

NOSE
Dark honey, raisin and cask char; chalk dust; old copper warmed by hand.
PALATE
Sherry-butt weight up front — fig, walnut skin — carried on a mineral spine.
FINISH
Slow heat that opens with water and refuses to be hurried, like the cellar it slept in.
SERVE
Bottled at the strength the cask decided. Add water in drops, not splashes — it turns somewhere around the fourth.

Juniper, orange peel and coriander seed laid out on dark basalt stone

Coppermill Dry

Dry gin · 43% ABV

NOSE
Juniper first, as it should be; bitter orange peel; coriander seed warmth.
PALATE
Clean and stony-dry, the orris holding the juniper honest all the way through.
FINISH
Crisp citrus-pith snap. The still's day job, done properly.
SERVE
Tonic if you must, but try it stirred over ice with a strip of orange peel before you decide anything.

LABEL IV

Long Rest

Cask-rested gin · 41.5% ABV

NOSE
Juniper mellowed by oak; vanilla pod; the ghost of the Millrace cask it borrowed.
PALATE
Rounder than a dry gin has any right to be — spice, soft citrus, a malty undertow.
FINISH
Gentle oak warmth. Nine months in whisky wood will do that to a gin.
SERVE
Sits closer to the whisky shelf than the gin shelf. Neat, cool, no ice — let the cask talk.

THE POUR LEDGER

Where we're poured

We don't ship bottles from this site — the bars and bottle shops below keep the range, and the tasting room pours every label on the ledger. Ask for us by the still, not just the name.

Why there is no shop button

Small batches sell through, and we'd rather you drank the range somewhere with good glassware than fought a checkout for the last bottle. Join a tour, taste all four, and carry one home from the still it came off.
